6-10 Lemons, washed (depending on size)
1 3-oz. package Lemon Jell-O
1 cup boiling water
3/4 cup good quality Lemon Vodka, I like Hangar One
1 3-oz. package Lemon Jell-O

1/4 cup cold water
Cut each lemon in half and hollow out down to the white pitch taking extra care not to puncture the skin. Place the halves in a muffin pan or large tray filled with rice or dry beans to keep them upright and level for filling. Chill in refrigerator while making Jell-O filling.
Make the Jell-O according to the package directions, except in place of the cup of cold water, substitute 3/4 cup of Lemon Vodka, along with 1/4 cups of cold water. Transfer to container with a pouring spout to make for easier filling. Fill each lemon half and refrigerate for at least 4 hours or overnight.
Once the Jell-O is completely set, use a sharp knife to slice into wedges and serve.
