Lobster, Baby

 




This recipe is luscious,  buttery, delicate yet decadent and very Lobster-y!

3 small uncooked lobster tails, or 8 oz. cooked lobster
1 Tbl. salted butter
1 small shallot, finely diced
1/2 tea. lemon zest
1 Tbl. fresh Italian parsley, finely diced
2 tea. hot sauce
1 egg

Secret cheat


QUESTION: What do I do with excess stuffing? Easy, roughly spoon 1 inch drops of stuffing onto a cookie sheet and bake at 400-degress until the shaggy edges are browned and crispy.  These are fabulous as a topping to any hot bowl of soup especially chicken noodle.

Jalapeno Powder Tall Blonde Cookbook Recipe

Jalapeno Powder. I struggled on how to make this post interesting, what image to use, what description to offer but very simply put I now tell all my friends, "Don't buy grocery store spices anymore".  The best part of this statement is that you can create your own flavor bombs with ingredients you cannot find in a prepackaged spice jar, and the flavors are more intense and fresh tasting. I don't recommend parsley, it must always be used fresh.

While most of us were stuck at home last year I found new ways to amuse myself  and spend my free time that I no longer used for daily commute or face to face meetings. I decided to spend my time in the kitchen as this is one of my passions to create new dishes and new ways of cooking.  You do too, or you would not be reading my cookbook blog.

Shrimp Mushroom Rice - VIDEO

 


My mother used to ask if I was partly Chinese because I love eating rice so much. HA, wouldn't she know? I would flood my white rice with melted butter, hollow out a sourdough dinner roll and fill it with rice while at the dinner table.

In a two and a half minute video I can show you how to make this delicious and healthy rice dish. It is a meal, not just a side dish.  Remember health has the word "heal" and this dish will heal you craving for something satisfying.

Straw-Barb Tart


Strawberry Rhubarb pie is not exactly an American original recipe but it sure is a classic. Here is TALL Blonde's three part tart with a Pecan nut crust instead of flour and a crispy, toasty streusel topping.

I made this in an 8-inch springform pan, because I am too cheap to go out and purchase a tart pan as this is my first attempt at this recipe. So if it did not turn out nicely all I wasted was the ingredients at the time of this post.

Obviously by now, it turned out well or this recipe would not be published. HA!

Duck Tales


Duck a L'Orange in 50 minutes. Make a quick orange sauce (below), score the fat throughout, salt/pepper both sides and place fat-side down on a dry skillet at medium-high heat to render the fat. Turn over after about 10 minutes and cook until 130-degrees for medium rare. Take off the skillet and allow to rest for 5-10 minutes before slicing. Serve with Brussel Sprouts sauteed in the rendered duck fat.

This is a very special asparagus dish served chilled with home-made mayonnaise on a hot summer night. It is light, tangy, refreshing and super easy to make.

Slam Brussel Sprouts


I hate Brussel Sprouts, PERIOD!
Until . . . . . . . .
I had tasted the brussel sprouts a friend ordered over dinner at Tyler Florence's San Francisco Restaurant, Wayfare Tavern. These are truly a foodie fantasy. I now always insist my dining companion orders them and they thank me for the recommendation.

I have recreated to the  best of my ability their formula and they taste 99.9% perfect. These have a sweet acidity of pomegranate-balsamic vinegar syrup glaze topped with bacon jam. This is served as a traditional side, or incorporate it into your favorite "kitchen sink" salad where everything is added from the fridge and tastes fantastic.
