Asparagus Cheese Prosciutto


This is a very special asparagus dish served chilled with home-made mayonnaise. It is light, tangy, refreshing and super easy to make.

Now, the asparagus recipe first:

Fresh asparagus
Swiss cheese, thinly sliced for easy rolling & room temperature
Prosciutto, thinly sliced for easy wrapping

Cut the length of your asparagus spears the length of your sliced Swiss cheese.  Simmer is some water with a pinch of salt until tender, about 10 minutes.  Do not drain you will need them warm to make rolling them into the sliced cheese easier.

Place a slice of cheese on your work surface, lay two cooked asparagus spears onto the cheese slice. The warm asparagus will help to make the cheese soft and pliable so it does not break while rolling the edges around the asparagus like a package.  Make sure the spear tips are showing to make your package pretty.  Wrap the prosciutto around the cheese envelope holding it all together, chill.

Serve with home-made mayonnaise drizzled on top, as seen pictured above.  Perfect with some crunchy butter French bread, or as size dish with fish.
