Amp'd Up Shortbread


Such a simple recipe that any child the age of 8 and up can make.
TALL Blonde took a simple Mayonnaise Cookie recipe, which is basically a richer and lighter shortbread cookie and made it sinfully delicious.

1 cup granulated sugar
2 cups all purpose flour
1 cup mayonnaise
1 tea. baking soda1 tea. good vanilla extract
1 tea. orange extract

1 cup semi sweet chocolate chips, melted

Pre-heat oven to 350-degrees.

Mix in a bowl first six ingredients. Mixture will be crumbly.  Make a ball for easier scooping and with a 1 tablespoon ice cream scoop, or kitchen tablespoon make small balls of dough and place on  greased cookie sheet.  With a kitchen fork press down leaving a nice groove pattern on the top.  Bake for 10 to 12 minutes until edges just begin to turn color but still very blonde.  Cool on a wire rack immediately after removing from oven so they do not continue to over bake on a hot cookie sheet.

Slowly melt the chocolate by placing in a microwave for only one minute.  Stir wil a fork to continue to melt chocolate pieces and place the bowl in another vessel filled with hot kitchen tap water to stay melted.  If necessary to make the chocolate spreaable you can add a small amount of butter or a few drops of milk until you reach drizzle consistency.

Arrange cookies on a tray or cookie sheet close together and with the tines of a fork dip into melted chocolate and drizzle over the cookies making a nice irregular pattern of streaks.  Chill in refrigerator for the chocolate to set.  Make approx. 50 cookies.
