Pizza Slaw

Say bye-bye to that boring Margherita $4 grocery store frozen pizza. It is like a tired old 80's movie. Try this TALLBlonde Pizza Slaw on top of your next favorite Three Cheese Pizza.

The first time I ever had a pizza with a fresh tossed salad on top was at California Pizza Kitchen.  It was their Pear, Hazelnut, Gorgonzola pizza and freshly dressed salad leaves were thrown on top.  I was so intrigued and it's memory has never left me.  Now I have created the ultimate fresh topping...Pizza Slaw.

This "slaw" is perfectly married with a three-cheese pizza or a pepperoni pizza for added salt and that porky smoked flavor.  I like to add to my grocery store pizza fresh mozzarella slices and thinly sliced fresh onion before baking. It adds a nice richness and balance to the piquant slaw.

Bake pizza first, then sprinkle slaw over the top after finished baking.  Ingredients as follows:
          
Fresh chopped Italian parsley
Black olives, halved
Capers, lightly chopped so they don't roll off your food
Red onion, finely diced
Marinated dried figs, chopped*
Apple cider vinegar***
Olive oil
Hot Sweet Pickles**
Pinch of Black pepper, Red pepper, Salt, Sugar

*Marinated figs can be made at home.  Purchase dried black figs, cut in half and place in a container with a lid (Tupperware). Add good quality Balsamic vinegar, honey, fresh cracked black pepper and a pinch of salt for the marinade to absorb into the figs.  Leave for at least three days before using.

**Purchase a jar of Sweet Gherkins and add a heaping teaspoon of red chili flakes.  Let marinate in the refrigerator for at least two weeks before using.

I always keep a jar of apple cider vinegar that is spiked with fresh pineapple spears that were briefly boiled to release the fresh pineapple flavors before storing in the refrigerator.
