This Gin & Tonic cake is very easy and wonderfully refreshing when served chilled just like your favorite classic libation. In this recipe you may use a box cake mix. (I said it would be easy)
2 Tbl. gin
2 Tbl. tonic
2 tea. simple syrup
1 white cake
1/2 cup powdered sugar
juice of 1 lime
zest of 1 lime
1 bamboo skewer

Prepare the gin/tonic/syrup mix first
Bake 1 white cake as directed.
Immediately after removing from the oven poke a series of holes with a bamboo skewer through the hot cake.
Brush on syrup mix while cake is still hot for more even absorption.
While cake is cooling, make the icing and set aside.
When cake is completely cold, turn out onto serving platter and pour over icing. Chill in refrigerator so icing will set.
Garnish with fresh lime slices.
OPTIONAL:
As an option make an Espresso Martini cake.
Bake a chocolate cake; soak with a drizzle of Kahlua, Vodka and simple syrup while cake is hot. Slather with chocolate frosting, decorate with a few whole coffee beans.
