Vegan Chocolate Cake Tall Blonde Cookbook Recipe

There is some debate if this chocolate cake recipe is truly vegan due to the use of refined sugar.  The process of making white sugar involves the sifting through bone dust. The only sugar that does not undergo this process is powdered sugar but that has corn starch added and not proper for baking a cake. You may chose to substitute using brown rice syrup, date syrup, maple syrup, molasses or agave,  This cake recipe is intended for those folks that are vegan in order to reduce cholesterol intake. Remember most honey is not considered vegan. Serves 6.

9"x5" loaf pan, greased

1 1/2 cups all purpose flour
1 cup white sugar
1/2 cup Dutched cocoa powder
1 tea. instant espresso (dried)
1 tea. baking soda

1/3 cup vegetable oil
1 cup water
1/2 tea. salt
1 tea. good quality vanilla extract
1 teas. apple cider vinegar

Sift together all dry ingredients into a medium bowl in first step above.  Combine remaining ingredients in a separate small bowl.

Add the wet mixture to the dry mixture and mix together until smooth.

Pour cake batter into greased loaf pan in lower rack of a pre-heated 350-degree oven.

Bake 40-45 minutes until a center crack appears.  Let cool completely before eating.
