Fish Taco Confetti

 


Without a long narrative, all you need to know about this is Sweet - Savory - Heat - Crunch.
This is a perfect accompaniment to simple fish tacos without adding a long list of expensive ingredients. This makes a meal quick and easy and flavor that is out of this world.

Even easier, spoon this over your favorite grilled or sautéed fish fillet and no need to bother with the corn tortilla. Leaving out the tortilla will  save you calories too. Serves 8

1/2 cabbage head, finely diced
1/4 cup ranch salad dressing, (TLLBLND uses Marie's)
3 Tbl. red bell pepper,  finely diced
3 Tbl red onion, finely diced
2 Tbl. cilantro leaves, finely diced
2 Tbl. red wine vinegar
1 tea sugar
1/2 tea salt
1/2 tea cayenne pepper

Mix all ingredients in a bowl immediately before serving.
Place a tablespoon of confetti in each fish taco and serve warm, or spoon over a cooked filet of your favorite fish filet. Have you thought of adding this confetti to shredded pork tacos?
