Peanut Sauce, THAI

You will never eat beef any other way again.

2/3 cups coconut milk
2 Tbl. Mae Ploy sweet Thai chili sauce
3 Tbl. crunchy peanut butter, (may use smooth)
1/4 water
1 tsp. light brown sugar
2 tsp. fish sauce
1/2 tsp. fresh lime juice

Place half of the coconut milk in a small saucepan and heat over light/moderate heat.

Stir constantly until slightly bubbly and fragrant, about 10 seconds. Add Mae Ploy, remaining coconut milk, peanut butter, water, sugar, fish sauce and lime juice to warm through.

Check for nice balance of salty, sweet, and sour flavor.

Excellent served with grilled beef or pork.
