Curry Chicken Salad


Honey Curry Chicken Salad with Ginger, Almonds, Grapes and Celery.
An old classis and still wildly yummy for the tummy.

1 lb. chicken breast, cooked and shredded
1 celery stalk
1 small red apple, diced
1/2 small red onion diced
1/2 cup red seedless grapes, halved
1/4 cup toasted pecans, coarsely chopped

Dressing:

1 Tbl. fresh lemon juice
1/2 cup mayonnaise
1/2 cup plain yogurt
1 tea. fresh grated ginger
2-3 tea. curry powder, to taste
1 tea. honey

Combine all dressing ingredients in a large bowl and mix well.
Stir in remaining chicken and chopped ingredients. Best if made 1 hour ahead before serving. Serve on a lettuce leaf, or a tortilla wrap.

Optional:
Add 1/4 cup raisins
Add 1/4 cup dried cranberries
Add 1/4 cup crumbles crispy bacon
Substitute toasted sliced almonds for toasted pecans
